Carrot Cake Crepes

I love crepes and cannot believe that I haven't found this recipe before but here it is. Carrot Cake Crepes combine the spicy flavor of carrot cake with the delicate texture of a crepe.  

Ingredients:

1 C all-purpose flour

2 T granulated sugar

1/2 t ground cinnamon

1/4 t ground nutmeg

1/4 t ground ginger

1/4 t salt

1 C milk (whole or 2% is best)

2 Eggs

2 T melted butter

1 t vanilla

1/2 C finely grated carrots - grate them on the smallest setting - so they will mix in with the crepe batter. 

4 oz cream cheese, softened

1/4 C powdered sugar

1/2 t vanilla extract

2-3 T milk (adjust for desired consistency)

Chopped walnuts or pecans (optional)

Maple syrup or honey (optional)


Instructions:

1. In a medium bowl, whisk together the flour, sugar, cinnamon, nutmeg, ginger, and salt.

2. In another bowl, combine the milk, eggs, melted butter (or oil), and vanilla extract.

3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Fold in the grated carrots until evenly distributed.

4. Heat a nonstick skillet or over medium heat. Lightly grease it with butter or oil. I have a crepe pan

5. Pour a small amount of batter (about 1/4 cup) into the pan. Tilt and swirl the pan to spread the batter into a thin, even layer.

6. Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden.

7. Flip the crepe and cook for another 30 seconds to 1 minute on the other side.

8. Transfer the crepe to a plate and repeat.

9. After crepes are made,quickly beat the softened cream cheese with the powdered sugar until smooth.

10. Gradually add the milk, a little at a time, until the filling reaches a spreadable or drizzle-able consistency. Stir in the vanilla.

11. Spread the cream cheese filling over each crape. Sprinkle with additional grated carrots and chopped nuts. 

12. Drizzle with honey or syrup. 

13. Fold the crepes - I prefer to roll mine. Serve immediately.
