Here’s another little taste of Annie’s world! When I was writing I Can’t Give Him a Valentine, I imagined that Annie’s favorite aunt would be just the type to take her out for a milkshake now and then. And naturally, if Annie’s choosing, it has to be a carrot cake milkshake.
The idea of that milkshake felt so right for the story that I decided to create a real recipe to share. This carrot cake milkshake is just as sweet, cozy, and a bit unexpected—just like Annie’s Aunt! I hope you enjoy making this special treat and maybe even sharing it with someone you love, the way Annie does in her stories. Enjoy!
Ingredients:
1 C vanilla ice cream
1/2 C milk
1/2 C finely grated carrots
1/2 t ground cinnamon
1/4 t ground nutmeg
1/4 t ground ginger
1-2 T crushed pineapple (optional, for added sweetness and moisture)
1-2 T cream cheese, softened (optional, for a hint of that cream cheese frosting taste)
Whipped cream, for topping (optional)
Crushed graham crackers
Instructions:
In a blender, combine the vanilla ice cream, milk, grated carrots, cinnamon, nutmeg, ginger, pineapple, and cream cheese. Blend on high until smooth and creamy.
If it’s too thick, add a bit more milk and blend again.
Pour into glasses, top with whipped cream, and sprinkle with crushed graham crackers.
