One of my favorite memories as a child was baking with my Grandma, so of course, food had to be part of Annie's story. As for carrot cake, it made sense that it would be Annie's favorite type of cake because it is mine. I love a good piece of carrot cake, but none of them match up to my grandma's.
Here is her cake recipe:
Cake Ingredients
2 C Flour 2 t Baking Soda 1 t Salt 2 t Cinnamon 2 C Sugar 1 ½ C Vegetable Oil 4 Eggs 1 t Vanilla 3 C Grated Carrots (My grandma grated by hand but you can buy carrots pre-grated). ½ C Walnuts ½ C Raisins Cream Cheese Frosting Ingredients 1 Stick Margarine 8 Ounces Cream Cheese 3 C Powdered Sugar 2 t Vanilla
Instructions
1. Preheat oven to 325. Grease loaf pan.
2. Mix flour, baking soda, salt, and cinnamon. Set aside.
3. In another bowl, mix oil, sugar, eggs and vanilla. Stir well. Add dry ingredients. Stir Well. Add carrots, nuts, and Raisins. Mix well.
4. Pour into pan and bake about 1 hour or until toothpick comes out clean.
5. Let it cool. At least one hour.
6. While cooling, set out margarine and cream cheese (They need to be at room temperature.).
7. Cream margarine and cream cheese together. Stir in vanilla.
8. In small increments, add powdered sugar.
9. Mix until smooth.
10. Frost top and sides of cake.
